The CG will be moved farther back. You'd need to add more nose weight to keep it in the same spot. Otherwise you'd have to go with the clear fins to change the CP relative to the new CG to keep the same stability margin.

I think I'll go with adding more nose weight--since the CM isn't glued on. I'm concerned that if the cluster is too far up in the booster, there might be an (unwanted) fire.

That shouldn't be a problem. My old Centuri Saturn V has the same deep recess. It was designed for 3x C6-3 power. I built it with a removable mount so I could use the 3x mount or a single D12. I never had a problem with charring.

Randy Boadway of eRockets.biz demonstrated a new product at the NARAM manufacturer forum tonight...a thin and lightweight sheet of carbon fiber material to protect from flame and heat. He had someone hold the flame from a lighter to it for around 40 seconds in a demo. That sounds like just the thing for use around a recessed motor mount or for protecting glider wings and tails.
