A cheaper, "cheatier" approach is burst mode. I have a low end camera that'll do about nine frames a second while the shutter release is held down. Usually one of them is a good picture of the rocket under initial thrust.
Either that or the igniter fails and I get about 30 pictures of the **** thing just sitting there.
Or it's an E motor and I get a great picture of flaming rocket bits flying in all directions.
